And these vanilla and almond cookies are one of them♥

They are incredibly delicious

Guilt free

Super simple to make

Great for kids

And contain no eggs, butter, flour or refined sugar

Just clean ingredients to nourish the body.

When I started changing the way I ate to  unprocessed and plant based, one of the big questions was…

What can I eat when I fancy something sweet that isn’t loaded with refined sugar, cream, butter, additives and all the other nasties?

Luckily a few Christmases ago I was given a fantastic book  by an accomplished Chef who had been trained in all kind of cuisines, including French, which inspired her love of sweet rich desserts and other delicious foods. Unfortunately this led her down the path of weight gain, constant fatigue, chest pain, joint pain and chronic heart burn. Sensing her symptoms were associated by her diet she began looking for a solution by eating a clean raw diet. As soon as she made the switch her symptoms dissolved in a matter of days and the weight melted off, not to mention the huge energy shift, glowing skin and mental clarity like she had never known.tart

No longer interested in the heavy, rich, nutrient-empty desserts she used to eat, she began making delicious desserts using her same refined skills but with some of the healthiest  nutrient-dense foods on earth!

I find this way of cooking incredibly innoative and it was all the proof I needed….. healthy really is more delicious!

This inspired me massively and I started to experiment myself,  I’ve got so many recipes I cant wait to share with you. 

When you can make desserts that provide you with antioxidants, vitamins, phytonutrients and minerals using real, whole, healthy ingredients that are bodies were made to eat you know its a win win situation! These cookies are a great way to start using these different types of ingredients.

The main ingredient which is almonds are one of the richest sources of vitamin E which is great for skin health and to protectalmonds it from UV damage. They also help you top up on important minerals like manganese which helps the body form strong bones and regulate blood sugar and magnesium for organ, muscle and nerve function also regulating blood pressure.

Almonds are a great source of protein.

You will need..

♥ 130 grams of finely ground almonds

♥ 2  1/2 tablespoons of melted coconut oil (your good healthy fat)

♥ 2 tablespoons of honey (natural sweetener and antioxidant)

♥ 1 teaspoon of vanilla extract

♥ 1/4 teaspoon of sea salt

♥ 1/4 teaspoon of baking powder   

Method….

You can buy almonds already ground but if you are doing it yourself blend the almonds in a food processor on high to get a really fine crumbly texture.

cookie doughCombine all the ingredience together in a bowl to form a nice cookie dough.

 IMG_1121[1]Then on a lined baking tray measure and roll 1 tablespoon of the dough and lightly press in the centre. This mix should make ten cookies. 

Pop them in the oven on 170C/340F  for about 10-15 minutes until they are golden. They may be a little bit soft when you first take them out the oven but they will firm up as they cool. 

You can store them in a sealed container for up to five days…but I guarantee they wont last that long!!!! 

This is a really simple recipe for a basic, delicious healthly cookie that you can totally adapt to your own style, someIMG_1122[1]times I add some dark chocolate or cacao nibs to make them choc chip and swap the honey for maple syrup. You can also double up on ingredients if  you want to make more.
