immune soupYou can’t beat home made soup.

And there’s nothing more comforting, nourishing, quick and simple than this recipe.

Tinned soups can be quite deceiving and some have a very high sugar and salt content not to mention all the other crazy additives. So its time to ditch the tins, its all about home made.

Here’s what you will need

  • two tablespoons of oil ( I use coconut oil)
  • two large sweet potatoes peeled and chopped (you can always replace this with pumpkin or squash)
  • one large red onion peeled and chopped
  • two cloves of garlic peeled and chopped
  • a chunk of fresh ginger peeled and chopped
  • two teaspoons of turmeric, one teaspoon of cinnamon
  • one vegetable stock cube dissolved in half a pint of hot water.

Heat the oil in the pan, add the onion and sauté for three minutes, then add the potatoes, garlic, ginger, turmeric, cinnamon and the vegetable stock. Put a lid on the pan and leave to shimmer for around fifteen minutes or until the potatoes are soft. You can always add more water depending on what consistency you like your soup.sweet potatos

But……… a few minutes before I blend the soup I add a little bit more magic, two tablespoons of  goji berries and one tablespoon of manuka honey, any natural honey is ok to use but I always bring out the manuka this time of year.

 All honeys boast some level of antibacterial powers but manuka contains properties that are superior to those found in other strains. It contains unique antiviral, antifungal, anti inflammatory, antioxidant wound repairing and overall health promoting properties that make it an amazing superfood worthy of a top space in your pantry this winter.

Goji berries are  incredibly good for you and I am going to devote a whole blog post to them soon. But what I will tell you now is that they contain a very special type of large sugar molecule called polysaccharides. These sugars have been shown to increase the production of white blood cells, the army of the immune system. This makes goji berries an extremely useful ingredient during colds and flu, and for keeping the immune system strong at other times too. These two ingredience also give the soup a lovely subtle sweetness.goji berries

Blend all the ingredience together, I use a hand held blender, add some garnish (i’m a lots of pepper and coriander girl) and serve.
