So being a Nutritional Therapist I’m on a constant quest to research and find out whats the ‘latest and greatest food‘ – what’s causing a buzz!
But this is when its very easy to forget that some of our simple daily produce – with a few tweaks – can be transformed into nutritional powerhouses!!!!

Just a few tweaks!
So here are my 6 simple tips to boost the nutritional value of your food.
It’s time to take it to the next level..
♥ To get 100 times more vitamin D from your mushrooms leave them facing gills up on a sunny window ledge for a few hours so they can soak all the magic up!
♥ To get double the lycopene (the red pigment that protects against certain cancers, heart disease and stroke) store your tomatoes on a work top or window ledge – not in the fridge!
♥ Simmer blueberries for about 4mins to make a tasty compote. This will double the antioxidants compared to raw berries and lovely to pour over yogurt or ice-cream.
♥ Lightly steaming certain vegetables – like carrots – releases antioxidants by breaking down cell walls. This results in much higher levels of beta-carotene in the body.
♥ Want to know how to get even more health benefits from your healthy green juice? Add some fat! It may sound strange but it will help you absorb the maximum amount of nutrition from your drink. Certain nutrients and minerals are fat soluble, meaning fat must be present for your body to absorb them.
Add a teaspoon of coconut, flax seed oil or chia seeds to your drink, or an omega-3 supplement, this also counts!!!
♥ And finally..Before adding garlic to your meals – crush the clove and leave it for about 15min. This triggers an enzyme action that boosts the healthy compounds in garlic.
